These tasty no bake Birthday Cake Bites are super fudgy in texture and have that lovely combination of vanilla and sprinkles to recreate that traditional birthday cake flavour.
This is a really quick and easy recipe to make as the ingredient list is not too long and the bites only take five minutes to make. I personally prefer these when they have been stored in the fridge or freezer for a little while so are firmer in texture but they are still delicious immediately after you have made them.
The amount this recipe yields will depend on what you use to scoop out the mixture but I typically get between 6 and 8 from this amount of ingredients, however, you can make more or less depending on the amount of mixture you use in each scoop.
These will last for up to one week stored in the refrigerator, however, if you want to prolong their shelf life you can store them in the freezer for up to one month. Simply allow a couple of minutes to thaw out after removing from the freezer before eating.
I use flax in this recipe because it adds some fibre and protein to the bites and boosts their nutrient profile, however, this is not really an essential ingredient so if you do not have any you can actually just omit this ingredient. You may find the texture is altered very slightly and the dough is a little bit wet, if this is the case, simply add one extra tablespoon of almond flour or ground almonds to the dough.
I like these drizzled in a little bit of melted dairy free chocolate and think white works particularly well with these flavours. The chocolate also helps the extra sprinkles on top of these Birthday Cake Bites to stick but this is completely optional. If you decide to take this extra step remember additional time will be needed to melt and drizzle the chocolate over and for it to set.
Alternatively, may prefer to roll the bites in more sprinkles than I have noted so that the outsides of them are completely coated. I would recommend pouring some sprinkles into a bowl and just rolling each bite around in it until covered.
When making these make sure you check the ingredients of the sprinkles to ensure they are suitable for your dietary requirements as many are not gluten free. This recipe uses peanut butter and almond flour, however, if you cannot have nuts you could try a version of this using a nut free peanut butter style product and oat flour made by blitzing oats in a blender. The texture will not be quite as fudgy but they will still be delicious.
