These cappuccino cookie dough bites make a great breakfast on the go but are also the perfect afternoon pick me up alongside a coffee on a rainy day! They require no baking and consist of just a handful of ingredients meaning that they are ridiculously quick and easy to make.

I made these as an experiment after the success of my gingerbread bites and they did not disappoint! The recipes are actually quite similar, the only difference really being the flavours added to the base, so it will come as no surprise that these bites are also really delicious coated in dark chocolate and sprinkled with sea salt. To make these cappuccino cookie dough bites you will need to use an instead coffee powder that is more of a fine powder than granules. If you can’t find any fine instant coffee powder you could use granules that you have ground in a pestle and mortar. I have noted to use almond flour in this recipe, however, ground almonds will work too.

I have noted the ‘prep time’ to be 70 minutes, please note that this includes the time needed for the cappuccino cookie dough bites to set! I have noted to place these in the fridge to set, however, if you were desperately craving them you could eat them straight away I just prefer a firmer consistency. I like to keep these in the fridge once they have set for the same reason. To increase their shelf life you could store them in the freezer and just allow them a few minutes to thaw out.

Ingredients

  • 100g 1 cup + 1 tbsp almond flour
  • 60g 1/4 cup peanut butter
  • 50ml 2 tbsp + 2 tsp maple syrup
  • 1 handful dark chocolate chunks
  • 1 tsp instant coffee powder

Method

  1. Combine all ingredients in a large mixing bowl until a sticky dough forms
  2. Use an ice cream scoop or teaspoon to scoop out a chunk of the mixture and, using the palms of your hands, roll it into a ball
  3. Repeat this until all of the mixture has been used up
  4. Pop the cookie dough bites into the fridge to set for a minimum of one hour
