The Best Double Chocolate & Raspberry bites (Gluten Free, Vegan)

These delicious no bake chocolate and raspberry bites combine two of my favourite flavours, dark chocolate and raspberry, and the result is just so incredibly indulgent. The sweet yet slightly bitter chocolate compliments the tartness of the freeze dried raspberries perfectly and makes for a really rich and decadent snack despite these being a nutrient dense recipe.

These bites contain white chocolate for additional sweetness, however, if you prefer you can omit this ingredient or even use a dairy free milk or white chocolate instead. I always prefer to use chunks of white chocolate from a bar that I have chopped up myself but chocolate chips would work too.

The amount this yields depends entirely on the size of the bites you create but I would say between four and six is a good amount to make with this amount of no bake dough. If you decide to make any more remember you may need to amend the amount of melted dark chocolate required.

I usually store these in the refrigerator, however, you can also keep them in the freezer and just allow them a couple of minutes to thaw out before eating. I have noted the preparation time to be 70 minutes which may seem excessive but this does also include the time required for the bites to set.

Ingredients

  • 75g 1/4 cup + 3 tbsp dairy free dark chocolate
  • 50g 1/2 cup + 1 tbsp almond flour
  • 30g 2 tbsp peanut butter
  • 30ml 1 tbsp + 2 tsp maple syrup
  • 2 tbsp cacao powder
  • 1 handful freeze dried raspberries
  • 1 handful dairy free white chocolate chunks or chips

Method

  1. In a large mixing bowl combine the almond flour, cacao powder, peanut butter and maple syrup until a sticky dough forms
  2. Add the white chocolate chips or chunks to the dough and mix well, ensuring the pieces are evenly distributed throughout
  3. Separate the dough into four to six evenly sized chunks, depending on your desired size, and use the palm of your hands to roll them into balls
  4. Melt the dark chocolate using a Bain- Marie and spoon over the balls, completely coating them in a layer of chocolate
  5. While the chocolate is still wet sprinkle the freeze dried raspberries over the top of the bites
  6. Pop into the fridge to set for a minimum of one hour
