The Best Tahini Apple Oat Bars (Gluten Free, Vegan)

These delicious no bake Tahini Apple Oat Bars consist of just a few ingredients and are so easy to make.

I would normally use the flavours of tahini, apple, dates and pecans later in the year as the weather drops a little cooler, however, I had apples and pecans I needed to use up before a week away so have delved into my Autumnal recipe ideas! I am so glad I did though as these no bake bars are lovely and, because they are frozen, they will help keep you cool during those hotter months.

I like to have these as a mid morning snack with a coffee to keep me going on busy days, however, they are great at any time of the day. I have also made versions of these bars with added chopped apricots and ginger which worked well so they are really versatile!

These bars are based on my Lemon & White Chocolate Oat Bars, which you can find here. When creating this recipe I decided to use tahini as, not only do I love the flavour of it paired with dates, but I wanted to create a nut free recipe, (the pecans are optional). The original recipe uses peanut butter in its place, however, now that I know this works with tahini you could go ahead and use it to create a nut free version of the Lemon & White Chocolate Bars.

I used a dark chocolate to drizzle over the top of the bars, however, you can use whatever kind you fancy. I thought white chocolate would work well with these flavours but I thought it might be too much for me personally combined with the dates. Having said that, if you have a massive sweet tooth this would be perfect for you.

I do not core or peel my apple before using but if you would prefer to then you can. I have noted to use a 8β€³ x 8β€³ baking tray to make these and slice them into bars once frozen but you could use individual brownie trays or a silicone muffin mould instead if preferred. I have noted the preparation time to be 40 minutes which may seem excessive but please do keep in mind that this includes the time needed for the bars to set.

I keep these Tahini Apple Oat Bars stored in the freezer and just allow them a couple of minutes to start thawing out before eating. Please keep in mind it is best to keep these cold otherwise they will start to lose their firmness. Ingredients

  • 150g 1 + 1/2 cups + 2 tbsp gluten free oats
  • 75g 1/4 cup + 2 tbsp dairy free chocolate
  • 4 tbsp tahini
  • 4 tbsp maple syrup
  • 1 red apple
  • 1 handful pitted dates
  • 1/2 handful chopped pecans (optional)

Method

  1. Roughly dice the apple and add to a large mixing bowl
  2. Chop the dates into pieces and add to the bowl along with the tahini, maple syrup and oats
  3. Combine the ingredients well until a sticky dough forms
  4. Scrape the dough into a small tray lined with parchment paper, ( I used 8" x 8" for this), and use the back of a spoon to pack the mixture down tightly
  5. Melt the remaining chocolate using a Bain- Marie and drizzle it evenly over the mixture
  6. If you are using the pecans, sprinkle them over the top of the bars before placing in the freezer to set for ten thirty minutes
  7. Allow a few minutes to thaw out before slicing into bars
