These delicious no bake white chocolate and lemon bars consist of just a few ingredients and are so easy to make. I used to find the combination of lemon and white chocolate a little odd but as soon as I tried it I was a convert! The sharpness of the lemon works so well with the sweet white chocolate – it really is an elite combination.

I like to have these as a mid morning snack with a coffee to keep me going on busy days, however, they are great at any time of the day. I have also made versions of these bars with added chopped apricots and ginger which worked well so they are really versatile! If white chocolate and lemon isn’t really for you then you could use milk or dark chocolate with the zest and juice of an orange instead. I usually use a 8″ x 8″ baking tray to make these and cut them into six pieces but you could use individual brownie trays or a silicone muffin mould instead if preferred. I have noted the preparation time to be 70 minutes which may seem excessive but please do keep in mind that this includes the time needed for the bars to set.

I keep these white chocolate and lemon bars stored in the freezer and just allow them a couple of minutes to start thawing out before eating. Please keep in mind it is best to keep those cold otherwise they will start to lose their firmness a little.   • 150g 1 + 1/2 cups + 2 tbsp gluten free oats
  • 125g 1/2 cup dairy free white chocolate
  • 4 tbsp peanut butter
  • 4 tbsp maple syrup
  • zest of 1 lemon
  • juice of 1/2 lemon

Method

  1. Roughly chop 50g of white chocolate into small chunks and add to a large mixing bowl along with the oats, peanut butter, maple syrup and the juice and zest of 1/2 lemon. Mix well until a sticky dough is formed and the chocolate pieces are evenly distributed throughout
  2. Scrape the dough into a small tray lined with parchment paper, ( I used 8" x 8" for this), and use the back of a spoon to pack the mixture down tightly
  3. Melt the remaining white chocolate using a Bain- Marie and drizzle it evenly over the tray containing the lemon bars
  4. Top the bars with the remaining lemon zest and pop into the freezer to set for a minimum of one hour
