Delicious gingerbread bites that are nutrient dense and require no baking! They are really quick and easy to throw together – I promise you will not regret making them.

These gingerbread bites pack a festive punch due to the amazing flavour combination of chocolate, ginger and cinnamon, however, they are still perfect to snack on the rest of the year too. They are super easy to make and you could make them even simpler by omitting the chocolate but, let’s face it, why on earth would you want to do that?

I have noted the amount the recipe yields to be between eight and ten but obviously this depends on how big you make the bites. Once these have set, you can continue to store them in the freezer if you like a firmer texture and just allow them a few minutes to thaw out before eating – this will also increase their shelf life. Alternatively you can store them in the fridge but they do need to be kept cold.

The ‘prep time’ states that these will take 65 minutes, please note this includes the time needed for these to set.

Ingredients

  • 100g 1/2 cup + 1 tbsp dairy free chocolate (melted)
  • 100g 1 cup + 1 tbsp almond flour
  • 50g 3 tbsp peanut butter
  • 50ml 2 tbsp + 2 tsp maple syrup
  • 2 tbsp crystallised stem ginger
  • 1 tsp cinnamon
  • 1/2 tsp ginger

Method

  1. Chop the stem ginger into small pieces and add to a large mixing bowl
  2. Add all the ingredients, except the chocolate, to the bowl
  3. Mix together well until a sticky dough like consistency is formed
  4. Use a teaspoon or ice cream scoop to scoop out evenly sized chunks of dough and roll into balls
  5. Dip the balls into the melted chocolate, ensuring each one is evenly coated, before placing on a tray lined with parchment paper
  6. Pop the tray into the freezer and allow the gingerbread dough bites to set
