The Best Gingerbread Peanut Butter Fudge (Gluten Free, Vegan)

This gingerbread fudge is a really easy way to whip up a dessert that feels festive but requires minimal effort. You only need to look at the ingredients to realise that isn’t traditional fudge but, in terms of consistency and appearance, it seemed the best way to describe it! It is a much ‘healthier’ alternative to traditional fudges but so delicious!

This is a no bake dessert and it is best to keep it in the freezer and just allow it a few minutes to thaw out before eating. I press this into an 8″ x 8″ tray but it doesn’t quite reach the corners so using something smaller would actually be ideal if possible!

I like to drizzle this gingerbread fudge with dark chocolate as I love the combination of ginger and chocolate together but this step is completely optional. I have noted the ‘prep time’ to be 70 minutes, this may seem excessive for a no bake dessert but please keep in mind this includes the time needed to set.

Ingredients

  • 4 tbsp peanut butter
  • 2 tbsp maple syrup
  • 50g 1/4 cup dark chocolate (optional)
  • 1 tsp coconut oil (melted)
  • 1/4 tsp ginger
  • 1/4 tsp cinnamon
  • pinch of nutmeg

Method

  1. Mix all of the ingredients, except the chocolate, in a large bowl until well combined
  2. Press firmly into a tray lined with parchment paper
  3. If you want to add the dark chocolate drizzle just melt it using a Bain- Marie and drizzle it evenly over the gingerbread mixture
  4. Pop into the freezer to set for a minimum of one hour
  5. Remove from the freezer and slice into chunks before eating!
