Five Minute Sweetcorn Summer Salad (Gluten Free, Vegan)

This super simple sweetcorn salad is the perfect recipe to make as a summery side at a barbecue or when you are just dining al fresco. It is packed full of lovely fresh and light flavours that all work really well together. It has quickly become a favourite salad of mine simply because of how simple, convenient but good it is!

I have made versions of this in the past where I have added fresh chilli to this, taking it to a whole new level. I decided to leave it out for the sake of the recipe but this is an option if you like your food with a little bit of a kick. I use kidney beans in this but black beans or adzuki beans would both work equally as well. You could also change the vegetables used in this and add in red onion, cherry tomatoes, avocado, lettuce etc if you had any that needed eating.

If you like really zesty, citrusy flavours you could grate some of the lime zest into this salad in addition to using the juice. I like to serve this simple sweetcorn salad with my Creamy Jalapeno Dressing, lime wedges and extra coriander

Ingredients

  • 1 x can sweetcorn (drained weight 260g)
  • 1 x can kidney beans
  • 1 red pepper
  • 1/4 cucumber
  • 1 handful shredded coriander
  • 2 spring onions
  • juice of 1/2 lime
  • 1/2 tsp paprika
  • 1/2 tsp sea salt
  • splash avocado oil

Method

  1. Drain the sweetcorn and black beans and add to a large salad bowl
  2. Roughly chop the pepper, discarding the seeds, and add to the bowl along with the chopped cucumber and spring onions
  3. Tear or roughly chop the coriander and add to the bowl along with the sea salt and paprika
  4. Squeeze the lime juice into the bowl and add a splash of avocado oil before mixing well to combine all of the ingredients together
  5. Serve with additional lime wedges and coriander if desired
