This delicious sausage casserole is the ultimate comfort food! When the weather gets colder I just crave hearty, warming food and this classic sausage casserole with a rich and tangy tomato sauce definitely fits the bill! It is a really filling and homely dish that requires minimal effort but still tastes amazing!
I usually make this in my slow cooker, and cook it on high for 4 1/2 hours so this is an option if you have one. If not, you can easily make this on the hob by following the recipe below. I keep this recipe simple by just using green beans instead of lots of different vegetables. If you wanted to you could add extra vegetables to this depending on the ingredients you have available, meaning it is a pretty versatile recipe and ideal to make to reduce food waste.
You could also try this with fresh beef tomatoes instead a tin of chopped tomatoes if you have any that need using up. Alternativly, you could use both. I have noted to use a white onion in this recipe but you could use red if preferred. If you don’t have any new potatoes you could always just use larger potatoes that you cut into smaller chunks.
To make this vegan you will need to use meat free sausages and a vegetarian or vegan stock cube, however, if you eat meat you can use meat containing versions of these. This is honestly one of those dishes that you could make completely vegan and you would not miss the meat as there are such good vegan alternatives out there.
