This comforting sausage and apple traybake is the perfect dinner to make when you crave a hearty meal but don’t want to put lots of effort into making one.

To me, this is the perfect compromise when the weather is a little bit too hot for a full Sunday dinner at the weekend. It still has that cosy feel due to the roasted root vegetables, however, the flavours of the apple, maple syrup and mustard give this a summery vibe.

When making this I use vegan sausages but you could use any type you wanted. Do not worry if you forget to defrost them as you can actually add them to the traybake whilst frozen if needed, just remember to check they are fully cooked before eating!

The ingredients I use in this dish are interchangable and you can just treat this recipe as a rough template if needed. I really like this with carrots and parsnips as I think the flavours work so well with the apple and the mustard, however, if you wanted to add in any green vegetables or cauliflower you have that needs eating you can. I also think it would really well if you swapped the red onion for leeks in this recipe.

I have noted that this serves two to three people which may seem a little vague, however, it would depend how big your portions are. This creates two large portions served on its own but if paired with some additional cooked greens, gravy and maybe some yorkshire puddings it could even stretch to feeding four.

The mustard and maple sauce used in this is really delicious and the amounts listed create the perfect blend of sweet and savoury for me. If you prefer more or less of either ingredient then amend the amounts accordingly, just remember to perform a taste test before pouring it over the traybake.

In total, this sausage and apple traybake spends around 90 minutes in the oven when I make it. Keep in mind that ovens do vary so yours may be ready in more or less time, ensure you keep an eye on it when the timer is coming to an end.

  • 6 vegan sausages
  • 4 large carrots
  • 3 large white potatoes
  • 2 large parsnips
  • 2 apples
  • 1 red onion
  • 5 cloves garlic
  • 3 tbsp maple syrup
  • 2 tbsp mustard (heaped)
  • pinch sea salt
  • pinch black pepper
  • splash olive oil

Method

  1. Chop the parsnips, carrots and potatoes into chunks and place in a large roasting tray. Top with a drizzle of oil, a pinch of salt and place in a preheated oven for 40 minutes at 200 degrees Celsius, shaking the tray at the halfway point
  2. Slice and core the apples into pieces and peel the garlic cloves, add both to pan along with the sausages. Arrange the items so everything is evenly distributed across the tray
  3. Return the tray to the oven and bake for another thirty minutes, again, checking at the halfway point and moving the contents of the tray around to ensure everything cooks evenly
  4. Mix together the maple syrup and the mustard along with a generous pinch of sea salt and black pepper. Use a pastry brush to coat the sauce onto the contents of the tray, paying special attention to the sausages. Return to the oven for another 20 to 30 minutes until everyting is cooked
