This easy to make Triple Chocolate Chickpea Cookie Dough is a chocolate lover’s dream and puts a healthy spin on a classic! The chickpeas in this recipe mean that it is a nutrient dense snack or dessert that is high in protein.
This is based on my 5 Minute Chocolate Chip Chickpea Cookie Dough which you can find here. This is a fairly versatile recipe in the sense in can be eaten on its own or thrown into other recipes. For example, you could add chunks into banana ‘nice cream,’ you could use it in the centre of chocolate cups and you could even throw it into baked goods such as my Gooey Chocolate Brownies. My chickpea cookie dough is so quick to throw together it makes the perfect snack or dessert when you want something sweet without waiting. For best results you need to make this in a food processor, however, you could make this recipe in a blender if needed but the finish will not be as smooth. I like to add one to two tablespoons of plant milk toward the end of the blending process to ensure a really smooth finish but you can omit this step if needed. When blitzing the ingredients together you may need to stop and scrape the sides down a few times to ensure everything blends evenly
I like to use dairy free chocolate that I have cut into chunks in this recipe, however, chocolate chips or buttons would also work. I use a mixture of white and milk chocolate in this to get that indulgent triple chocolate feel, however, you could add a dark chocolate in too or simply use one type – whatever your personal preference. I like to sprinkle sea salt flakes over this chickpea cookie dough before eating but this is optional. You can make this healthy cookie dough in advance and store it in the fridge for up to three days if needed. However, it will need stirring again before eating as the edges will harden therefore it is best enjoyed freshly made!
