The Best No Bake Chocolate Tahini Cookies (Gluten Free, Vegan)

My delicious No Bake Chocolate Tahini Cookies are a quick and easy no bake dessert perfect for tahini lovers.

These cookies are based on my recent No Bake Peanut Butter Cookies which you can find here. After creating the original recipe I had a few requests for a nut free version so my No Bake Chocolate Tahini Cookies were born. I love the combination of chocolate and tahini and, as the tahini is quite runny, it made sense to add the extra dry ingredient in the form of cocoa powder. However, if you would prefer to try a version of this cookie without the cocoa powder please do – just substitute it with a little bit of extra coconut flour. Stir in an extra tablespoon at a time until the required consistency is reached – the dough should be sticky enough to roll into balls but not sticky enough that it coats your hands.

These no bake cookies make a great nutrient dense snack and are a β€˜healthier’ version of baked cookies. This is a really simple recipe to follow as the cookies require just a handful of ingredients. I like to decorate these with a drizzle of melted chocolate and a sprinkle of sesame seeds, however, these cookies are still delicious without. If you opt not to use these extras it means you will actually only need three ingredients in order to whip these up – two of which you probably already have in your pantry.

I like to use a dairy free white chocolate to drizzle over these no bake cookies as I think the sweetness works well with the slightly bitter flavours of the tahini and cocoa. If preferred, you could use a dairy free milk chocolate or dark chocolate in this recipe instead. I like to top my cookies with a sprinkle of sesame seeds, however, this is optional.

I place these cookies to set in the freezer and tend to leave them there. I just remove the cookies a few minutes before eating in order for them to thaw out. Storing them in the freezer does extend their shelf life, however, if you would prefer these cookies a little softer you can just keep them in the refrigerator once set. If you would prefer to keep them in the fridge they will last for around five days.

Ingredients

  • 135g 1/2 cup + 1 tsp tahini
  • 70ml 3 tbsp + 2 tsp maple syrup
  • 60g 1/2 cup coconut flour
  • 50g 1/4 cup dairy free white chocolate
  • 15g 2 tbsp cocoa powder
  • pinch sesame seeds (optional)

Method

  1. Add the tahini and maple syrup to a mixing bowl and whisk until they come together
  2. Pour in the coconut flour and cocoa powder. Stir well, allowing the mixture to form a sticky dough
  3. Divide the mixture into six even chunks and roll each piece into a ball
  4. Transfer the balls onto a piece of parchment paper and, using the back of a fork, press down onto the cookies to flatten them and create a pattern on top
  5. Melt the chocolate and drizzle over the top of the cookies
  6. Add a sprinkle of sesame seeds across the top of each cookie
  7. Place the cookies in the freezer to set for a minimum of twenty minutes
