The Best Salted Peanut Chocolate Fudge (Gluten Free, Vegan)

This salted peanut fudge is so delicious it will take some serious willpower not to eat it all at once! I have named this cheat’s fudge as it closely resembles it in consistency despite it requiring no cooking and being a lot easier to make! You only need a handful of ingredients to make this tasty treat and I guarantee that, if you’re a fan of dark chocolate and peanut butter, you will love this.

The amounts I have noted will make enough for a small batch but if you double everything then it will all fit neatly into an 8 x 8 inch tray. You could put this into any tray or loaf tin etc you desired but do keep in mind this will affect the thickness of the salted peanut fudge. Once packed into the tray just pop it into the freezer for a few hours to set before slicing.

I then store it in the freezer and just allow each piece a few minutes to thaw out before eating so as not to damage my teeth! It is a really nice frozen treat and definitely a ‘healthier’ alternative to most baked goods. You could keep this in the fridge once set if desired, however, I personally like a firmer texture.

You can’t really taste the peanut butter in the mixture itself but if you are not the biggest fan then you could always omit it from the topping and drizzle white chocolate over before freezing instead. I have noted the prep time to be 65 minutes, please note that this includes an hour setting time so they actually only take five minutes to throw together!

Ingredients

  • 75g 1/2 cup + 3 tbsp cacao powder
  • 50g 3 tbsp peanut butter (extra for topping)
  • 50g 3 tbsp coconut oil (melted)
  • 35ml 2 tbsp maple syrup
  • 1 handful pitted dates
  • pinch Himalayan sea salt

Method

  1. Add the cocoa powder, peanut butter, maple syrup and coconut oil to a large bowl and mix until a sticky dough forms
  2. Roughly chop the dates and stir through the dough until evenly distributed
  3. Scrape the mixture into a lined tray and use your hands to press down and pack it firmly into the tray, ensuring it is smooth on top
  4. Spoon out generous dollops of peanut butter and smooth over the top of the mixture. Do not worry about it being neat or covering the entire thing
  5. Sprinkle the Himalayan rock salt sparingly over the top and pop the tray in the freezer for a few hours to set
