These delicious Spiced Apple Pancakes make the perfect cosy sweet breakfast when the weather drops cooler and they are a great way to sneak some extra fruit in!

I am a big fan of eating seasonally and am always very happy when Autumn rolls around because of all the apple themed recipes that I can create. I love pancakes and this spiced apple version is probably my favourite out of all the ones I have created – bold statement I know!

The warming flavours of cinnamon and ginger work perfectly with the apple and maple syrup to create a really comforting breakfast or brunch that can be enjoyed at any time of the week. As these pancakes are not time consuming to make this recipe doesn’t have to be limited to weekends like other delicious breakfasts, you could easily throw this together in ten minutes before work.

This recipe is actually based on my easy 10 Minute Fluffy American Style Pancake recipe which you can find here. This is a recipe I created when I wanted to come up with my own healthier pancake that did not contain oats so, when I started playing around with a spiced apple pancake, this was the obvious place to start. The end result are these flavourful, light and fluffy pancakes that I think you will love.

When making these pancakes I use a red apple as they are usually sweeter and I find the flavour works better. I do not remove the skin or the core of the apple, only the apple pips and the stem. You could take out the centre and peel the apple if you prefer, however, you won’t be able to tell if you did or didn’t once the apple has been added to the food processor.

I add dried ginger to these pancakes but you could use grated fresh ginger instead if desired. I like to add cinnamon, cloves and nutmeg to this recipe, however, I have also made these pancakes using just cinnamon as a spice and they were still good. I have noted that I use soya milk but any type will work in this.

I have noted that this serves one person, however, keep in mind that it will be a large portion that could probably be split between two. I like these topped with more sliced apple caramelised in a little bit of dairy free butter and coconut sugar, yogurt and maple syrup.

Ingredients

  • 120g 3/4 cup gluten free plain flour
  • 1 banana
  • 1 red apple
  • 170ml 1/2 cup + 3 tbsp soya milk
  • 2 tbsp maple syrup
  • 1 tbsp flax seed
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • pinch cloves
  • pinch nutmeg
  • splash cooking oil or butter of your choice

Method

  1. Place the banana, milk and maple syrup into a blender or food processor and blitz well
  2. Roughly chop the apple into small pieces, removing the pips and stem, and add to the food processor. Blend until no lumps remain
  3. Add the dry ingredients and blitz until a smooth batter forms
  4. Allow the batter to sit for a minute before heating some butter or oil in a large frying pan and pouring the mixture in, forming a series of small pancakes
  5. Allow to cook for two minutes each side, ensuring they are golden brown before serving
