The Best Watermelon, Feta & Strawberry Summer Salad (Gluten Free, Vegan)

This delicious Watermelon Salad is easy to make, super refreshing and absolutely delicious!

It is the perfect salad to make for a quick tasty lunch when it is hot out. For me, watermelon, strawberries and mint epitomise Summer so this salad is a wonderfully refreshing addition to any barbecue or al fresco dining experience. At first the addition of feta, balsamic and black pepper might seem a little bit of a strange flavour combination but, trust me on this, they just work so, so well! If you are a fan of watermelon you will absolutely love this recipe.

When making this I do remove the watermelon skin as I think it is a little bit too crunchy for this recipe, however, the entire watermelon is edible so you could just leave it on if preferred. If you do remove it, remember to save it and incorporate it into a savoury recipe, such as my Sweet & Sour Watermelon recipe, at a later date.

The original recipe for this consists of just three ingredients which are watermelon, feta and mint so if you only had these ingredients in you could still make a pretty delicious and simple salad. However, the addition of the strawberries, balsamic and black pepper really take this to the next level and help the flavours just pop in your mouth.

I do not use any sea salt in this recipe because the feta is salty enough for me but you could add some to taste if you wanted. You could add chopped cucumber and red onion to this salad to incorporate more flavours and vegetables but what I have written up is exactly how I prefer this dish.

As this salad only takes a few minutes to make I always make it fresh. If you were a little bit short on time you could make this watermelon salad in advance, however, I would recommend adding the balsamic vinegar at the last minute right before serving. If not, you risk the balsamic gathering at the bottom of the salad bowl and soaking into the watermelon there and overpowering the rest of the flavours.

I use vegan feta to make this recipe but depending on your dietary requirements you could just use a dairy containing version.

Ingredients

  • 1/2 watermelon
  • 1 handful strawberries
  • 100g 1/2 cup dairy free feta
  • 1 handful fresh mint
  • 2 - 3 tbsp balsamic vinegar
  • pinch black pepper

Method

  1. Chop the watermelon into bite sized cubes and add to a large salad bowl
  2. Halve the strawberries and add to the bowl
  3. Crumble the feta into the bowl
  4. Tear the mint into small pieces and add to the bowl
  5. Drizzle the balsamic vinegar into the bowl and add black pepper to taste
  6. Toss everything together well before serving
