This delicious green apple salad is fresh, tangy and sweet all at once. It is so quick and easy to throw together but is absolutely packed full of flavour.
The apple juice really emphasises the sweetness in the green apples, however, the apple cider vinegar really highlights the sharpness of them meaning that you get the best of both worlds in this recipe. The grated ginger adds an extra depth to this salad that helps to create that zingy, tangy taste and adds some warmth.
This salad makes a great quick and tasty lunch option when eaten on its own or paired with a protein source, however, it is also great for barbecues or al fresco dining when it is eaten as part of a larger meal. I have noted the amounts listed below serve two, however, if you were going to eat this by itself for lunch you could easily get through it all.
I do not peel or core the apple to make this but I do remove the pips, if you preferred you could take the core out but I think the apple skin adds some nice texture. This recipe works best wth green apple but you could use any, it would just result in a sweeter dish which I don’t think works quite as well.
I like to use fresh ginger in this salad but you could use dried ginger too if preferred, or even omit it entirely. I use one teaspoon of fresh grated ginger but you could increase this amount to suit your personal preference or even throw in some sliced green chillis for additional warmth if you fancied it.
I have kept this salad simple by using just a few ingredients. I have not tried this recipe using any other vegetables or fruit as substitutes for any listed, however, if you wanted to mix it up I think any green crunchy vegetables such as edamame, celery or maybe even raw finely chopped broccoli florets would work the best.
