These blueberry waffles make such a delicious breakfast, brunch or dessert!

It took me a couple of attempts to get this vegan blueberry waffle recipe right but I honestly think I’ve cracked it! I like a moderate amount of blueberries in my waffles but if you want more or less you can just tweak the recipe to suit your preference.  For other baked breakfast ideas that use blueberries why not try my Blueberry Banana Breakfast Bars or my Blueberry & Lemon Baked Oats.

As these waffles are baked you do not need a waffle maker in order to make them and will instead just need an ovenproof mould. I used a silicone waffle mould with five separate sections for this and I find that it is the perfect portion for one hungry person or, if the waffles are part of a larger breakfast, then it would be ideal to be shared between two.

I have noted the bake time to be 18 minutes but, as ovens do vary, allow up to 21 and keep an eye on them. I love these topped with extra blueberries, maple syrup and some icing sugar but you could definitely get creative with your toppings.

Ingredients

  • 50g 1/4 cup + 1 tbsp gluten free plain flour
  • 50ml 3 tbsp soya milk
  • 25g 2 tbsp caster sugar
  • 25ml 2 tbsp olive oil
  • 1 handful fresh blueberries
  • 1/2 tsp baking powder

Method

  1. Place all ingredients in a large bowl and mix to form a smooth batter
  2. Pour the batter into the waffle mould, ensuring there is roughly the same amount of mixture in each of the five compartments
  3. Place the waffles in a preheated oven and bake for 18 minutes at 180 degrees Celsius
