This easy cinnamon bun style dessert is easy to make and only requires a handful of ingredients. It is a healthier, nutrient dense version of the classic pastry that is gluten free, vegan and sweetened using only maple syrup and coconut sugar.
I absolutely love cinnamon buns, however, it can be tough to find gluten free and vegan versions! I really wanted to create an easy and healthy dessert that gave a nod to this classic pastry and this single serve cinnamon bun bake is what I ended up with!
This single serve bake makes the perfect dessert, however, it is also an acceptable breakfast choice! To make this for two, simply double up on ingredients and split between two greased ramekins.
I have made this using dairy free yogurt with a soya base and a coconut base and both work, although I did personally prefer the coconut yogurt. If you eat dairy you could just use yogurt made with cow’s milk in this recipe.
I add half a teaspoon of coconut sugar to the top of this bake before placing in the oven but this is optional. I like to drizzle an additional tablespoon of yogurt and maple syrup over the top along with a pinch of a cinnamon once baked in place of the classic icing sugar glaze, however, you could opt to use the traditional glaze instead if desired.
You will need to use an ovenproof dish or ramekin for this bake that you have greased. I usually just melt a little bit of coconut oil and spread this around the base and sides of the dish before scraping in the batter. I have noted the bake time to be 25 minutes but ovens do vary so keep an eye on your bake to prevent burning.
