A tasty little no bake dessert perfect for coffee lovers! After creating a raspberry version of my bounty bars last summer I started thinking about what other flavours I could put with coconut and these little babies were at the top of my list!

In all honesty coconut desserts aren’t my favourite but the coffee addition in these has changed that! I wrote the full recipe up yesterday so it’s live on my website - link in bio 💜

It looks like the warmer weather is here to stay so we may as well get stocked up on some delicious frozen treats to help us cool down 🥵 

You might be a little skeptical of these bars, however, the flavours honestly work so well together! They are easy to make and you’ll need just five ingredients 🙌🏻 full recipe is up on my website - link in bio 💜
4 Ingredient Banana & PB Chocolate Cups 🤩 I fe 4 Ingredient Banana & PB Chocolate Cups 🤩

I felt these tasty little frozen bites needed another place on my grid 🙌🏻 if you’ve been thinking about making some treats to cool off with today, take this as your sign to make them 🤩

These tasty cups are easy to make and consist of one of the best flavour combinations known to man 😍

I used peanut butter in this, however, you could use any nut butter you fancy! If you can’t eat nuts I bet this would work really nicely with chocolate spread, biscoff style spreads or even jam too 🙌🏻

Ingredients (makes 6) 

✨ 1/2 banana
✨ 3 tbsp peanut butter
✨ 100g chocolate (I use 80% dark but you could use whatever you want)
✨1 tbsp coconut oil (optional BUT it will make your chocolate silkier so it stretches further) 

Method

✨ Melt the chocolate and coconut oil together until smooth
✨ Pour 3/4 tablespoon of the chocolate mixture into the bottom of each muffin slot (are they called muffin slots? 🤔)
✨ Chop the banana into coins and place one on top of each of the chocolate puddles
✨ Top each slice of banana with 1/2 tablespoon peanut butter
✨ Pour 3/4 tablespoon over chocolate over the coins. Distribute any remaining chocolate evenly between the cups
✨ Place in the freezer to set for one hour
Chocolate & Chia Muffins 🍫 These deliciously Chocolate & Chia Muffins 🍫 

These deliciously gooey chocolate and chia muffins are the perfect thing to whip up if you fancy some weekend baking 😍

They have a lovely fudgy texture that’s more like a brownie than a traditional muffin and are made with nutrient dense ingredient 🤩 They are gluten free and vegan as always but are also suitable for nut allergy sufferers 🙌🏻

Ad | Introducing my Cheesy Wild Garlic Pesto Ciaba Ad | Introducing my Cheesy Wild Garlic Pesto Ciabattas 😍

These deliciously soft and fluffy ciabattas have recently been launched by @geniusfoodofficial and our prayers have been answered because they’re vegan friendly in addition to being gluten free 🙌🏻🌱 I’ve spoken before about how I have a bad habit of skipping lunch when I’m busy so these are exactly what I need to help elevate my lunch game! 

This recipe is quick, easy and insanely good! Try it next time you need a simple but delicious lunch 🙌🏻

Ingredients (serves 2)

✨2 deliciously soft Genius ciabattas
✨2 handfuls cheese of your choice, (I used a mixture of 2 types of dairy free cheese plus 2 tbsp nutritional yeast to help it melt)
✨4 tbsp wild garlic pesto (recipe below)
✨1/2 handful chopped parsley

Method 

✨ Slice the ciabattas lengthways and grill for a few minutes on either side until golden brown
✨ Spread a thick layer of pesto on each slice 
✨ Top with a generous sprinkle of cheese and return to the oven until it starts to melt
✨ Top with the chopped parsley and any additional wild garlic leaves before enjoying 

To make my Wild Garlic Pesto you will need:

2 handfuls wild garlic leaves*
50g toasted pine nuts
2 tbsp nutritional yeast
2 tbsp olive oil
2 cloves garlic
1/2 lemon (juice only)
Sea salt & black pepper to taste 

Simply add everything to a food processor and combine 🙌🏻

Chocolate PB & J Bombs 🍓 These delicious litt Chocolate PB & J Bombs 🍓 

These delicious little bombs are a favourite of mine and will absolutely blow your mind, (sorry for the pun I just couldn’t help myself) ✨ 

I love the combination of jam and peanut butter and it works so well with the melted df white chocolate! 🍓 Why not experiment by using a dark chocolate coating or swapping the filling to a chocolate/biscoff style spread etc if there’s a different combination you’d prefer 🙌🏻
