The Best Thyme Roasted Butternut Squash (Gluten Free, vegan)

This delicious but easy thyme roasted squash is my favourite way to jazz up the humble butternut squash when it is in season.

When the weather drops cooler I just crave comforting meals and this lovely roasted squash fits right into that category. It is lightly seasoned using only a hint of garlic, fresh thyme, salt and pepper – all of which work so perfectly with the sweetness of the butternut squash.

Although I usually make this recipe with butternut squash you could use acorn squash or pumpkins, etc, too if desired. I think a version of this using pumpkin in place of butternut squash and fresh sage instead of thyme would be just as delicious. Although I do love eating seasonally, one good thing about using butternut squash for this recipe is that they are widely accessible so the time of year you make this delicious side dish does not have to be limited.

This thyme roasted butternut squash is actually part of one of my favourite salads, regardless of the season, which you can find here – The Best Squash & Kale Autumn Salad – however, it is really versatile and you could use it in a whole host of other recipes. Include it in a roast dinner, use it a side instead of potatoes, throw a handful of it into a risotto, just eat a big plate of it on its own for lunch, etc. The list is endless!

Personally, I really like to make a big batch of this and just keep it in the fridge so I have it ready to add into dishes over the following days. This is delicious hot but it is also really good cold so there is no real need to reheat it to add into salads if you don’t want to. The only problem with storing a batch of this in your fridge is that you may find the amount you have dwindles rapidly as, if you’re anything like me, you won’t be able to resist eating a handful whenever you open the door.
