This super simple cucumber salad is so easy to make and requires just a handful of ingredients. It is a great way to jazz up the humble cucumber and is a perfect side dish for anything you would serve with a salad. As it is so simple it didn’t even occurr to me to add it to my website until I made it for a friend who told me the recipe needed to be shared so here it is!

It is full of fresh flavours like dill, lemon and the cucumber itself which give it a really light, fresh and summery feel. It is the perfect accompaniment to a barbecue on a hot summer’s day and I usually serve it alongside my Buttery Corn Ribs and my 20 Minute Plant Based Pulled ‘Pork’ which you can find here.

Strangely, I’m not actually the biggest lover of cucumber but I could eat this fresh side dish all day! It is just so simple but so good! If desired, you could some extra lemon zest into this to give it even more of a lovely citrusy twist.

If you make too much of this cucumber salad, it is great to just throw in with a larger mixed salad the following day so nothing goes to waste.

Ingredients

  • 1/2 cucumber
  • 2 tbsp plain soya yogurt
  • 1 handful fresh dill
  • 1 generous squeeze lemon juice
  • pinch sea salt
  • pinch black pepper

Method

  1. Roughly chop the cucumber into slices and then quarter each piece and place in a bowl
  2. Roughly chop the dill and add to the bowl along with the other ingredients
  3. Stir until everything is well combined. Perform a taste test to check if any extra salt, pepper or lemon juice is required before serving
