This fiery tomato salad is so delicious and really quick to throw together. This is my wife’s recipe and is actually the thing that converted me to being a lover of tomatoes as, prior to eating this, I would give them a wide berth.

This tomato salad has the perfect flavour combination as the sweet tomato and sea salt work so well with the tangy white rice vinegar, lime and the spice of the chilli. Despite this recipe being super simple to make and only having a handful of ingredients, it really will elevate any meal.

This tomato salad is a great addition to any barbecue or picky meal, however, it is also great used as a sort of salsa if you wanted to use it to load on top of fries or dip nachos into it. Why not try this on top of my Loaded Sweet Potato Nachos alongside my Easy Guacamole recipe.

Depending on your personal preference, you may want to amend the amounts of lime, white rice vinegar and chilli flakes used in this recipe. Personally I think the amounts noted in the ingredients section creates the perfect blend of flavours, however, you can use slightly less white rice vinegar, lime zest and lime juice if you would prefer a less tangy flavour or less chilli flakes if you do not like your food overly spicy. Similarly, you could amend these amounts to use more if you want this to really pack a punch.

If preferred you could use chilli powder or finely sliced fresh chilli in this recipe in place of the flakes. You could also try this recipe using red wine vinegar in place of white rice vinegar if you are unable to find it. If you do stick to the original ingredients and use white rice vinegar ensure you use one that is suitable for your dietary requirements.

Ingredients

  • 2 large tomatoes
  • 1 handful coriander
  • 2 tsp white rice vinegar
  • 1/2 lime (juice and zest)
  • 1/2 tsp chilli flakes
  • big pinch sea salt

Method

  1. Finely chop the tomatoes and the coriander and add to a bowl
  2. Grate the lime and add to the bowl along with the juice
  3. Add the white rice vinegar, chilli flakes and sea salt to the bowl and mix well
  4. Serve with additional chilli flakes and sea salt
