This quick and easy tomato pasta sauce recipe is absolutely delicious and just goes to show that simple food is often the best.

This tasty dish can be thrown together in less than twenty minutes meaning it is a great meal to make during the week when you don’t want to spend too long cooking.

As the title indicates, this is a basic tomato pasta sauce recipe that uses just a handful of ingredients and is really lightly seasoned. As this pasta sauce is so simple, it really relies on good quality tomatoes to make it as delicious as it is. You should opt for a sweet vine ripened tomato as opposed to something like a salad tomato in order to get the most out of the flavour. The sweetness of the tomato paired with the sea salt and the tang of the balsamic vinegar work perfectly together in this recipe. I promise you will absolutely love this recipe if you try it.

I like to add a few torn basil leaves to this sauce before serving, however, this is completely optional. If preferred, you could opt to add some fresh oregano instead to take this recipe in a different direction. I would recommend making this recipe fresh as opposed to making it in advance, however, you could prepare this earlier in the day and turn it into a simple tomato pasta bake by topping it with cheese and baking prior to eating.

This is a delicious simple meal on its own or, if you wanted to add a protein source, this would be the perfect tomato sauce recipe to use in spaghetti and meatballs. Speaking of spaghetti, I have not noted down the pasta needed to serve this with in the ingredients but you will need to prepare a portion of pasta to serve two and add to the sauce. If the sauce has reduced down too much and is not quite as ‘saucy’ as you would like it to be then you can add a ladle full of the water the pasta has cooked in.

Ingredients

  • 4 large vine ripened tomatoes
  • 3 cloves garlic
  • 1/2 handful fresh basil
  • generous splash balsamic vinegar
  • splash olive oil
  • pinch sea salt
  • pinch black pepper

Method

  1. Heat the oil in a pan and add the roughly chopped tomatoes and a big pinch of salt
  2. Once the tomatoes have softened add the minced garlic, balsamic vinegar and black pepper
  3. Reduce the heat and allow to simmer for ten minutes
  4. Perform a taste test and add any extra salt and pepper if needed
  5. Add your cooked pasta and the shredded basil leaves to the pasta sauce and toss together before serving
