These delicious Miso & Aubergine Steaks are really simple to make and just bursting with flavour.

The first time I had Nasu Dengaku I was in a Japanese tea house in York and I absolutely fell in love with it. I knew I had to try and recreate this delicious dish at home so this warming ginger packed glazed aubergine recipe is my version.

I am a huge fan of ginger and garlic together and the flavours work so well with the savoury miso and the sweet mirin in this recipe. I find that aubergines make a perfect plant based substitute for meat as they soak up flavours beautifully, making them a really versatile ingredient if you are trying to eat more vegetables.

It is probably natural to be a little bit skeptical of this, given that its an aubergine, but my meat eating, vegetable dodging wife actually requests this which hopefully acts as an indication of how tasty it is! The glaze soaks into the aubergine flesh making it burst with flavour and the skin goes all lovely and caramelised, turning the humble aubergine into a bit of a show stopper!

If you want to make this recipe but do not have any mirin you could substitute this ingredient for maple syrup or honey, (if you eat it of course), in its place. If you have found yourself on this page there is a chance you are on a gluten free diet so make sure you check your miso is suitable for your dietary requirements.

I like to serve this Miso & Ginger Glazed Aubergine with rice and stir fried vegetables such as baby corn, broccoli and mangetout. Alternatively you could serve this as a side along with my Sticky Sesame Tofu if you are trying to increase your protein intake.

I have noted the bake time for my aubergine steak recipe to be approximately 40 minutes, make sure you check on the aubergines once 30 minutes have passed just to make sure they’re not burning as some ovens are hotter than others.

  • 2 medium sized aubergines
  • 2 tbsp grated fresh ginger
  • 2 tbsp white miso paste
  • 2 tsp mirin
  • 2 cloves garlic
  • 1 tsp sesame seeds (optional)

Method

  1. Slice the aubergines in half lengthways and use a sharp knife to score a criss cross pattern into the flesh. Place the aubergine halves on a baking tray, fleshy side facing up
  2. Mince the cloves of garlic and add to a small jug along with the ginger, miso and mirin. Mix well to combine
  3. Use a pastry brush to coat the top of the halved aubergines with the mixture
  4. Bake the aubergines in a preheated oven for 40 minutes at 180 degrees Celsius
  5. Top the aubergines with a sprinkle of sesame seeds before serving
