This delicious Spicy Sausage Pasta is bursting with flavour and is the perfect warming meal on those cold nights!

Pasta is my ‘go to’ meal when I am short on time and this new dish is so quick and easy to throw together that I promise it will become your new staple. It is the ideal comforting dinner on those wintery midweek nights when you just want to get cosy on the sofa instead of spending your evening cooking.

It is packed full of vegetables meaning that it is full of goodness as well as flavour! This is a great recipe to reduce food waste as, although I tend to stick with tomato, pepper and spinach like I have listed in the ingredients, you could honestly just throw in any vegetables lurking in your fridge that look to be on their last legs. I like this made with red pepper, however, you could make it using green, yellow or orange instead if needed.

I use three different types of chilli in this recipe – fresh, powdered and flakes sprinkled on top. Spice levels can be a little bit hit and miss when using fresh chillis so make sure you use some that are actually spicy, otherwise this ‘Spicy Sausage Pasta’ just becomes ‘Sausage Pasta.’ If you just want a little hint of heat you can opt to use one or two types of chilli instead of all three but amend the amounts as you see fit. You can also opt to omit the fresh chillis completely if you don’t have any to hand and increase the amount of chilli powder and flakes used, although I do like this dish best when made using fresh chillis!

I’m sure you have realised by now that I do not eat meat so I use vegan sausages in this recipe, however, if you are a meat eater you can use any kind you like. I have made this recipe in the past using a meat free chorizo style sausage which was nice, however, it definitely does add more of a smoked flavour to this dish which isn’t really what I had in mind for this recipe – although I do now think I need to create a slightly smoked version using it!

I have noted to use 150g of pasta in this recipe, however, please do feel free to amend this as you see fit. I normally use a gluten free supermarket own brand fusili pasta when cooking this, (as shown in the photos), but you can use any type you want.

I like this served with chilli flakes and plenty of fresh chopped parsley but these are completely optional. I can confirm that this works very well as a pasta bake meaning you could make this dinner earlier in the day, transfer it into an ovenproof dish ready to bake right before dinner time. Top with plenty of cheese and serve with garlic bread!

  • 6 meat free sausages
  • 150g 1 + 1/2 cups gluten free pasta (uncooked)
  • 1 can chopped tomatoes
  • 2 beef tomatoes
  • 1 red pepper
  • 2 handfuls spinach
  • 1 white onion
  • 2 red chillis
  • 2 cloves garlic
  • 1/2 handful fresh parsley (to serve)
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/4 tsp chilli powder
  • 1/4 tsp chilli flakes
  • pinch sea salt
  • pinch black pepper
  • splash olive oil

Method

  1. Peel and dice the white onion and add to a large pan along with a splash of olive oil
  2. Cut each sausage into three pieces slicing at a slight angle, before adding to the pan with the onions. Cook over a moderate heat, stirring often, until the sausages start to brown and the onions soften
  3. Roughly chop the two tomatoes and add to the pan along with a big pinch of salt and the chopped garlic
  4. Roughly chop the pepper and chillis and add to the pan, discard the seeds, (unless you are feeling brave and want to add the chilli seeds to the dish). Cook for a few minutes until the pepper begins to soften, stirring often
  5. Add the spinach, paprika, oregano, basil, chilli powder, more salt and pepper to the pan. Stir, allowing the ingredients to come together and reduce the heat
  6. At this point, cook your pasta according to the packet instructions
  7. While the pasta cooks, pour the can of chopped tomatoes into the pan containing the sausage and vegetables and mix well. Reduce the heat and simmer for ten minutes
  8. Drain the pasta and add to the pan, stir well
  9. Serve the pasta topped with the chilli flakes and plenty of fresh chopped parsley
