I absolutely love the combination of peanut butter and strawberry which makes these delicious squares the perfect sweet treat for me.

These delightful little squares are really simple to make and require just four ingredients! They really are fuss free as they require no baking and can be made in less than five minutes before popping them in the freezer to set. The prep time does state 35 minutes, however, this is only because it includes the time needed for these to be placed in the freezer

I usually use individual brownie trays to make these but this recipe is really versatile in the sense that you can use whatever tray or mould you have to hand. You could use a small lined baking tray or loaf tin and just slice into squares once they have set or even make these into individual cups if its all that is available to you.

I love to add slices of fresh strawberry to the top of these peanut butter and strawberry squares before placing them in the freezer but this is completely optional. You could even experiment by using a type of jam other than strawberry or adding a dairy free white chocolate drizzle over the top of these once done.

I use my Homemade Chia Jam recipe for these, (the perfect recipe to help reduce food waste and use up any berries that need eating by the way), but you could use shop bought if required.

Once these have set you can either transfer them to the fridge or keep them in the freezer. Personally I prefer a firmer texture so keep these in the freezer and just allow a few minutes to thaw out before serving.

Ingredients

  • 110g 1/4 cup + 3 tbsp smooth peanut butter
  • 100g 1 cup + 1 tbsp almond flour
  • 50ml 2 tbsp + 2 tsp maple syrup
  • 2 - 3 tbsp strawberry jam

Method

  1. Combine the almond flour, maple syrup and 60g of the peanut butter in a mixing bowl until a sticky mixture forms
  2. Scrape the mixture out into the mould and press down using your fingertips, ensuring they are tightly packed down and smooth on top
  3. Dollop the remaining peanut butter over the top of the first layer out and use the back of the spoon to spread it out in a thick and even layer
  4. Repeat this process with the jam, making sure the top is smooth
  5. If desired add sliced fresh strawberries to the top before placing in the freezer to set for a minimum of thirty minutes
