This easy recipe for grilled cinnamon peaches is quick to make and absolutely delicious.

This is a great way to turn the humble peach into something a little more showstopping. The flavours of the peaches, cinnamon and coconut sugar work beautifully together and result in a comforting, yet light dish.

This is a really versatile recipe as it works well as a light breakfast or snack but you could also make this on an evening and enjoy it as a healthy dessert. For breakfast, why not try this with additional granola and yogurt and, for dessert, use crumbled up gluten free ginger biscuits instead of granola and serve with a dairy free vanilla ice cream. I think this would work really well as the base for some kind of peach crumble or crisp so I do plan to experiment with this recipe more in future.

The lovely hint of citrus from the lemon thyme works so well in this recipe, however, this ingredient is completely optional so you can omit it entirely if needed. Alternatively, you could experiment with flavour pairings and try this using regular thyme instead.

I have noted that this recipe serves two people, however, I have eaten this amount to myself multiple times in the past, it just depends on how big your appetite is. It is easy to increase the serving size of this recipe by simply sticking to the rule of one tablespoon of granola and half a teaspoon of coconut sugar per peach. Use your intitiative when coating the peaches in melted butter and sprinkling the cinnamon over the top of them.

If you want to make these but you do not have any coconut sugar to hand, this recipe will work well with a light brown sugar too. You could use white if this is all you have in but brown sugar is the best substitute and will not affect the taste.

Ingredients

  • 3 peaches
  • 3 tbsp gluten free granola
  • 1 + 1/2 tbsp coconut sugar
  • 1 tbsp butter (melted)
  • 1 tsp cinnamon
  • 1 handful lemon thyme (optional)

Method

  1. Halve the peaches and remove the stone before arranging on a baking tray, fleshy side facing up
  2. Use a pastry brush to top each half with a generous coat of the melted butter
  3. Sprinkle the coconut sugar and cinnamon across the top of the peaches
  4. Grill the peaches for ten minutes until soft and the sugar is brown and bubbling
  5. Scatter the granola evenly across the peaches and sprinkle over the thyme if you are using it
  6. Return to the grill for another two minutes
