The Best Gingerbread Men (Gluten Free, Vegan)

I love gingerbread men and really wanted to create the perfect homemade version similar to what I used to bake with my grandma as a kid. I tried a few different variations of this recipe before I decided to use this BBC FoodΒ recipe as a loose base for my biscuits and altered the ingredients to make it gluten free and vegan!

This recipe creates gingerbread that are lovely and soft in the centre but crunchy and chewy on the outside, the perfect gingerbread person in my opinion! I used a small cutter and managed to get over 30 gingerbread men out of this recipe, however, the amount of biscuits you create will obviously change depending on the cookie cutter you use. I bake mine for 8 minutes but, as ovens do vary, you may need to allow up to 10!

Ensure you allow the gingerbread to cool before you remove them from the parchment paper otherwise they may just crumble. They need to have cooled completely before you move on to the decorating phase otherwise any toppings may just slide off. I’ve made these with a traditional topping of royal icing before but I personally prefer them dipped in dark chocolate.

You will need to use a block of hard dairy free butter or margarine in this recipe. The dough will be quite sticky so you will need extra flour for this recipe as you will need to sprinkle it over your worktops, rolling pin and hands.

Ingredients

  • 350g 2 cups + 3 tbsp gluten free plain flour
  • 175g 3/4 cup + 2 tbsp light brown sugar
  • 100g 1/4 cup + 3 tbsp dairy free butter (hard block)
  • 4 tbsp golden syrup
  • 3 tbsp cold water
  • 1 tbsp ground flax seed
  • 3 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp bicarbonate of soda
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • pinch sea salt

Method

  1. Mix the flax seed and water together and set aside for a minimum of five minutes or until a gel like consistency forms
  2. Add the flour, spices, salt and bicarbonate soda to a large mixing bowl
  3. Cut the butter into small chunks and add to the bowl
  4. Use your hands to rub the butter into the flour mixture until the contents of the bowl resembles breadcrumbs
  5. Add the sugar and stir
  6. Mix the golden syrup and flax egg together before adding to the mixture. Combine all of the ingredients together, (I find it easier to use my hands), until it begins to stick together
  7. Gently knead the dough until smooth before placing in the fridge to chill for thirty minutes
  8. Sprinkle some flour on a flat surface and place the dough in the middle. Roll the dough out, ensuring it is even, until it is approximately 0.5cm thick
  9. Cut out your gingerbread men, (or any other shapes you wish), before arranging on a sheet of parchment paper ensuring there is enough space between each one should they spread
  10. Repeat this process until all the dough has been used up and bake in a preheated oven for 8 - 10 minutes at 180 degrees Celsius
