My Creamy Chocolate Chip Avocado Bars are a lovely refreshing no bake dessert that will convert any avocado hater!

Believe it or not I don’t actually eat avocados that often so tend not to use them in recipes, however, when I saw loads of them reduced in my local supermarket I decided to buy a couple and get my thinking cap on. Due to their light flavour and creamy texture I had always been curious about how they would work in sweet recipes as opposed to savoury, (I went through a phase of making avocado chocolate mousse in my early twenties so knew they could work well), so decided to create some. You can actually taste the avocado in these bars, however, it works really well with the flavours of the maple syrup and dark chocolate so do not knock them until you’ve tried them! If you thought avocado was only good for guacamole, think again!

As these bars are frozen and the avocado mixture is so creamy they remind me of frozen lollies, meaning they would be the perfect refreshing dessert for summer. I might even try them made into popsicles next to see how they fare. As a rule, I am not a fan of chocolate and mint together but I actually think that adding some fresh mint leaves or peppermint essence to these bars could really elevate them.

You only need a handful of ingredients for these bars and they take around five minutes to construct, (the other two hours preparation time needed is for the bars to set), making them a really simple recipe. I think these would still be good without the chocolate chips if you wanted to make them even simpler. Alternatively, feel free to substitute the dark chocolate for a dairy free white or milk alternative if desired.

I use a 8″ x 8″ brownie tin lined with parchment paper to make these bars, however, you could honestly use whatever you have available. Just keep in mind the container they are in will affect the shape and thickness of these bars. If you cannot find large avocados you can use two medium sized ones instead. The avocados and banana both need to be ripe for this recipe.

Once frozen, these bars are best stored in the freezer. This will not only help them retain their firm texture but it will also extend their shelf life!

Ingredients

  • 1 + 1/2 large ripe avocados
  • 1 ripe banana
  • 100g 1/2 cup + 1 tbsp dark chocolate chips or chunks
  • 100ml 1/2 cup coconut oil (melted)
  • 75ml 1/4 cup maple syrup

Method

  1. Peel the banana and add to a food processor along with the avocado flesh, cooled coconut oil and maple syrup
  2. Blitz the ingredients together until a smooth glossy mixture forms
  3. Stir through the chocolate pieces ensuring they are evenly distributed throughout the mixture
  4. Pour the mixture into a lined 8" x 8" brownie tin, ensuring the mixture reaches into all four corners and is smooth on top
  5. Place in the freezer to set for a minimum of two hours before slicing into bars
