These delicious Cinnamon Baked Apples are the perfect cosy sweet dish to turn the humble apple into a showstopping breakfast, snack or healthy dessert.

I am a huge fan of eating seasonally and love using apples in recipes so I am always happy when Autumn rolls around! The apple baked with the cinnamon and coconut sugar makes such a great, comforting dish!

I personally love this for a cosy breakfast paired with some dairy free vanilla flavoured yogurt and a drizzle of maple syrup. You could also make this using a gluten free granola in place of the oats if you desire. These baked apples make a great snack or healthy dessert, why not try with some crumbled free from ginger biscuits in place of the oats and served with a scoop of ice cream.

I have noted that this recipe serves two people, however, I have eaten this amount to myself multiple times in the past, it just depends on how big your appetite is. You can easily decrease or increase the amounts listed to change the serving size by following the rule of using one tablespoon of oats or granola for each apple half.

If you want to make these but you do not have any coconut sugar to hand, this recipe will work well with a light brown sugar too. You could use white if this is all you have in but brown sugar is the best substitute and will not affect the taste. Although I have noted the amounts of cinnamon and coconut sugar to use in the ingredients, you can increase or decrease the amounts used to suit your personal preference. Why not try this recipe with an added pinch of ginger for some extra warmth?

Ingredients

  • 3 red apples
  • 6 tbsp gluten free oats
  • 1 tbsp dairy free butter (melted)
  • 1 tbsp coconut sugar
  • 1 tsp cinnamon

Method

  1. Halve the apples and remove the stone before arranging on a baking tray, fleshy side facing up. Remove the core if preferred
  2. Use a pastry brush to top each half with a generous coat of the melted butter
  3. Sprinkle the coconut sugar and cinnamon across the top of the apples
  4. Bake in a preheated oven for 15 minutes at 180 degrees Celsius
  5. Top each of the apple halves with a tablespoon of oats
  6. Drizzle any remaining melted butter, cinnamon and coconut sugar over the top of them before returning to the oven for another 5 minutes
