These tasty peanut butter bites are quick and easy to make and are so delicious! This is a raw dessert recipe I have made a few different versions of but I keep going back to this one as it is honestly soΒ  good! The bites are really tasty, require no baking and are really easy to make! They are just about acceptable to eat for breakfast if you find yourself in a rush but they probably work best as a dessert or sweet snack! They’re the perfect thing to make with kids if you find yourself stuck in the house and want something that will entertain them and result in tasty treats!

I use gluten free oats and dairy free dark chocolate chips in this, however, if you are not avoiding dairy or gluten you could use the regular versions. As I mention in the recipe, the dough will get very sticky due to the peanut butter and you may start to thing you have done something wrong but if you persist and keep kneading together then a sticky dough will form, I promise!

I have noted that the ‘prep time’ should be 70 minutes which may seem excessive but this is only because it includes the time needed to allow the peanut butter bites to set! If you were craving these straight away you could eat them instantly, however, I do prefer them to have a firmer texture so pop them in the fridge or freezer to set.

  • 150g 1 + 1/2 cups + 2 tbsp gluten free oats
  • 70g 1/4 cup + 3 tbsp dairy free chocolate chips
  • 4 tbsp smooth peanut butter
  • 3 tbsp maple syrup
  • Splash vanilla essence
  • Pinch sea salt

Method

  1. Pour the oats, chocolate chips and sea salt into a large mixing bowl
  2. Add the wet ingredients to the dry
  3. Mix well using your hands until a sticky dough forms, please note this mixture will be really sticky and will end up all over your hands but you will get the right consistency if you persist
  4. Break a chunk of the dough off and use your palms to roll it into a bite size ball, repeat this process aiming to make them all as evenly sized as possible
  5. Pop them into the fridge to set for an hour before eating
