Easy 15 Minute Sweetcorn Fritters (Gluten Free, Vegan)

These delicious sweetcorn fritters are so quick and easy to throw together and make the perfect breakfast or brunch addition!

I use chilli powder and paprika to give these a smokey flavour with a hint of spice that isn’t overpowering. If desired, you could increase the amount of chilli used to turn these into spicy sweetcorn fritters or even add fresh chilli in place of powder.

It can be difficult to make vegan fritters without the egg to bind them but I find that nutritional yeast and melted butter makes the perfect substitute whilst also adding some additional flavour. As this mixture is so thick you will need to scoop it out using either a tablespoon or teaspoon, (depending on the desired fritter size), as the batter is not pourable. If you use a tablespoon or anything larger ensure you are careful when flipping the fritters as the pieces of sweetcorn make them more likely to split.

I really like these fritters as a savoury brunch alongside grilled mushrooms and some avocado. If eaten as part of a larger meal this recipe will serve two. They are delicious with my Creamy Jalapeno Dressing poured over them!

Ingredients

  • 1 small can sweetcorn (drained weight 160g)
  • 4 tbsp plain gluten free flour
  • 2 tbsp nutritional yeast
  • 2 tbsp soya milk
  • 2 tsp dairy free butter
  • 1/2 tsp paprika
  • pinch chilli powder
  • pinch sea salt
  • splash olive oil

Method

  1. Add the drained sweetcorn to a mixing bowl and stir in the flour, nutritional yeast and seasoning until the sweetcorn is coated
  2. Melt the butter and add to the bowl, stir well
  3. Next add the soya milk and stir until a thick batter forms
  4. Scoop out one heaped tablespoon of the mixture and add to a pan containing some olive oil over a moderate heat. The mixture will be thick so you will need to use the spoon to shape it into a circular shape
  5. Allow to cook for a few minutes over a low to moderate heat before carefully flipping over. Once golden brown on both sides remove from the pan
  6. Repeat this process until all of the batter has been used up
