These delicious Chocolate Banana Pancake Poppers make a really fun breakfast or brunch for any age!

This recipe is based on my 10 Minute Healthy American Style Pancakes which you can find here. I did have to tweak the amounts used to create a thicker batter so that it sticks to the banana coins before they are transferred to the frying pan and cooked. I originally created a Raspberry Pancake Popper recipe which you can find here and, following its success, thought I would try with other types of fruit and banana seemed the obvious choice.

I love banana and chocolate together so decided to add one heaped tablespoon of cocoa powder into the batter to get my chocolatey fix, however, if you would prefer to use a plain pancake batter you can simply omit the cocoa powder while keeping the amounts listed for the other ingredients the same.

When preparing the banana slices ensure you turn them over in the batter gently to avoid squashing them. You will also need to take care when turning them over in the frying pan. When you place the banana slices in the pan you may find that some of the batter starts to drip off and pool at the bottom of them, do not worry about this. Fry them over a moderate heat, turning them frequently taking care not to burn them, until the batter starts to crisp. Do not worry if a few of them lose their shape – they do not need to be uniform.

I have noted that this portion of Chocolate Banana Pancake Poppers will serve two when made as part of a larger breakfast, however, if you have a large appetite you could easily eat this amount to yourself. To serve one person just use one banana and make a few small pancakes with any leftover batter. I like these pancake poppers for breakfast served with yogurt and a drizzle of maple syrup.

Ingredients

  • 2 + 1/2 bananas
  • 50g 1/4 cup + 1 tbsp gluten free plain flour
  • 3 tbsp soya milk
  • 1 tbsp cocoa powder
  • 1/2 tbsp flax seed
  • 1/2 tbsp maple syrup
  • 1/2 tsp baking powder
  • splash olive oil

Method

  1. Add half of a banana to a food processor or blender and blitz well
  2. Add the flour, soya milk, cocoa powder, flax seed, maple syrup and baking powder to the banana and blend until a thick batter forms
  3. Pour the batter into a mixing bowl
  4. Chop the banana into coins around 1cm thick and add to the bowl containing the batter
  5. Use a spoon to turn the banana slices over, taking care not to squash them, ensuring they are fully coated in the batter
  6. Heat some oil in a frying pan and gently transfer the banana slices over
  7. Allow the banana slices to cook over a moderate heat, turning often, until the batter starts to crisp
