The Best Healthy S’mores Oat Cookie Cups (Gluten Free, Vegan)

These Healthy S’mores Oat Cookie Cups are absolutely delicious and incorporate all the elements of traditional s’mores!

To me, November is all about the marshmallows so I thought it was the perfect time to create this healthier twist on s’mores. This is a great alternative to the traditional way of making them when the weather is too bad to sit outside with a fire! I based the cracker element on my Healthy Oat Chocolate Chip Cookies and used vegan marshmallows and chocolate to create a suitable nut free, gluten free and vegan version more people can enjoy.

When you bake these, the cookies will lose their shape and start to close around the marshmallow and chocolate which is actually really useful as they would be really messy if not! I personally think these are best enjoyed hot with the chocolate melted, however, they are still delicious enjoyed when cool, (as shown in the photots), the chocolate will just harden back up. These will last for up to five days in an airtight container.

I use a mixture of gluten free oats and gluten free flour in this recipe but if you wanted you could make these using just oats. Simply omit the flour and use 175g of oats instead of the amount noted. Personally I much prefer the texture that the addition of gluten free flour lends to these. In order to prepare the oats you will need to blitz them in a food processor or blender for a few minutes until they take on a fine, powdery consistency. If you are not on a gluten free diet you can use regular plain flour and oats in this recipe.

I tend to use a bar of dairy free milk chocolate when creating these s’mores cookie cups but you could use dark or white if preferred. I simply break a few pieces off the bar and layer them between the bottom cookie disc and the marshmallow, however, you could go really wild and put them above the marshmallow instead. You could also use a handful of chocolate chips instead of chocolate from a bar if thats all you had. I have noted you will need medium to large sized marshmallows in this, however, half a handful of mini marshmallows would work too.

I use a silicone muffin tray to create these cups, however, you could use individual brownie trays to create a similar dessert this is just a different shape depending what you have to hand.

  • 135g 1 + 1/2 cups gluten free oats
  • 100g 1/2 cup coconut sugar
  • 100g 2/3 cup dairy free milk chocolate
  • 75ml 3 tbsp + 2 tsp coconut oil (melted)
  • 40g 1/4 cup gluten free plain flour
  • 6 medium to large vegan marshmallows
  • 1 tbsp flax seed
  • 3 tbsp cold water
  • 1/2 tsp bicarbonate of soda
  • splash vanilla essence
  • pinch sea salt

Method

  1. Mix the water and flax seed together in a cup or small jug and set to the side for ten minutes until a gel like consistency forms
  2. Add the oats to a blender or food processor for a few minutes until a fine powder forms
  3. Add the coconut sugar to a large mixing bowl and, once the melted coconut oil has cooled, add to the bowl along with the vanilla essence and the flax seed. Mix well
  4. Add the oats, plain flour, bicarb and salt to the bowl and mix well using your hands until a sticky dough forms
  5. Split the dough into twelve evenly sized pieces
  6. Roll each chunk of dough into a ball before pressing down slightly to form a disc
  7. Place one of the discs in the bottom of a slot in a silicone muffin tray until you have used six
  8. Top each disc with a few pieces of chocolate
  9. Top the chocolate with one of the marshmallows
  10. Add one of the remaining discs to the top of each marshmallow until you have six s'mores sandwiches
  11. Bake in a preheated oven for 12 minutes at 175 degrees Celsius
